
Fried Cheese Friuli Style (Veneto)

Ingredients
Low fat cheese- 1/2 pound
Mature carnia cheese- 1/4 pound
Butter- 3-4 tbsps
Fat salt pork- 3 tbsps
Onion- a few slices
Eggs, beaten-2
salt and pepper
This is a simple little recipe which can be prepared with any piquant cheese which will fry. Carnia is a fairly piquant cheese of provolone type.
Cut all of the cheese into small pieces. Heat the butter and saute the salt pork and onion until the onion is soft but not brown. Add the cheese and continue to cook slowly until it melts. Turn it over, add the eggs, season to taste with salt and pepper and cook the eggs until they are firmly set and slightly crisp around the edges.
Serves 4.
