Stewed Chestnuts (Lombardy)

Ingredients

Dried chestnuts- 1 pound

White wine- 1 1/2 cups

Salt- pinch

Sugar- 2 1/2 tbsps

Light cream- 1 1/4 cups

 

Dried chestnuts are usually available from Italian shops and also in large stores and delicatessens. They are apt to be seasonal, so check with the vendor that his stock is fresh. When cooked, especially as in the following recipe, they can be delicious.

Soak the chestnuts overnight in the wine plus enough water to cover. The following day, place them in a pan with their liquid, add salt and sugar, and cook over a low heat for about 20 minutes, or until they are tender and have absorbed most of their liquid. Serve chilled with cream.

Serves 4-6.
