
Apple Fritters Lombardy Style (Lombardy)

Ingredients
All purpose flour- 2 cups
Salt- pinch
Egg-1
Milk and water, mixed- 1 1/4 cups each
Green (cooking) apples, peeled and thinly sliced- 2-3 large
Grated rind of 1/2 lemon
Oil for deep-frying
Granulated sugar
Sift the flour into a bowl with the salt. Make a well in the middle. Drop the egg into the well and stir it into the flour until thoroughly mixed. Gradually add the milk and water, beating all the time until the batter is smooth. Leave for 1 hour.
Add the slices of apple and lemon rind. Have ready a deep pan of hot olive oil. Deep fry the apple slices, a few at a time, until a pale amber color, turning them once. Take them from the pan with a perforated spoon, drain them quickly on paper towels and serve very hot, sprinkled with sugar.
Serves 4-6.
