
Frog's Legs in Butter and Wine (Lombardy)
Ingredients
Frogs legs, skinned and cleaned- 2 pounds
Dry white wine- 1 1/4 cups
Butter- 6 tbsps
Flour- 1 tsp
Salt
Parsley, finely chopped- 2-3 sprigs
Juice of 1 small lemon
Marinate frog's legs in white wine
Melt the butter in a deep frying pan. Take the frog's legs from their marinade, put them aside and pour the wine into the pan. Mix this thoroughly with the butter, then add the legs. Cook over a moderate heat until the wine is reduced by half.
Mix the flour, a pinch of salt and the parsley with 2 tablespoons of water. Stir this into the pan and continue to cook over a moderate heat for another 15 minutes. Sprinkle the frogs legs with lemon juice just before serving.
Serves 6.
