Sauce to Accompany Game (Umbria)

Ingredients
Red wine - 1 cup
Dry white wine - 1 cup
White vinegar - 1 cup
Olive oil - 1/2 cup
Parma ham, shreadded - 2 oz
Lemon, peeled and sliced - 1/2
Garlic, crushed - 3 cloves
Sage - 2 leaves
Rosemary - 1 sprig
Juniper berries - 4
Salt and pepper
Chicken livers, finely chopped - 2
Put all the ingredients, except the chicken livers into an enamel pan. Bring to a boil, lower the heat and simmer for 30 minutes. Remove the garlic, sage and rosemary, and add the chicken livers. Cover and cook slowly until the sauce is reduced by more than half.
Serve hot as an accompaniment to any kind of roast game.
