Baby Squid with Parsley (Tuscany)

Ingredients

Baby squid - or cuttlefish - 3 1/2 pounds

Olive oil - 1/2 cup

Garlic, crushed - 2 cloves

Salt and pepper 

Parsley, finely chopped - 3-4 sprigs

Juice of 1/2 lemon

Slices of fried bread

Clean, wash and dry them. Heat the oil and saute the garlic gently until it begins to brown; discard it. Add the squid, season with salt and pepper, and cook over a brisk heat for about 10 minutes. Sprinkle with parsley and lemon juice, serve very hot, garnished with slices of fried bread.

Serves 6
