Tuscan Fried Chicken (Tuscany)

Ingredients

Frying chicken - 3 1/2 pounds

Olive oil - 1/2 cup

Juice of 1 lemon

Parsley, finely chopped - 2 sprigs

Salt and pepper

Flour

Eggs, beaten - 2

Olive oil for deep-frying

 

Clean and singe the chicken if necessary, and cut into small pieces: two pieces from each leg and wing, four from the breast and the back. Marinate for 1 hour in olive oil mixed with lemon juice, parsley, salt and pepper.

Drain the chicken pieces, pat them dry and dredge with flour, then dip into beaten egg. Deep fry in hot oil untill golden brown, drain on paper towels and serve immediately.

Serves 4
