Calf's foot Tuscan Style (Tuscany)

Meat

Ingredients

Calf's feet - 6

Salt

Onions - 2

Celery - 2 stalks

Carrot - 1

Butter - 2 tbsps

Olive oil - 4 tbsps

Salt and pepper

Tomato paste - 3 oz

Parsley, finely chopped - 2 sprigs

Ground cinnamon - pinch

Grated parmesan cheese - 1/4 cup

 

Singe the feet if necessary, wash them well and boil them in plenty of salted water with 1 onion, the celery and carrot for about 3 hours. Take the feet from the pan, pull the meat off the bones and cut it into pieces. Heat the butter and oil, and gently fry the remaining onion, diced until it begins to brown. Add the meat and a few tablespoons of the stock. Add this to the pan and let it cook until you have a good thick sauce. Finally, sprinkle with the parsley, cinnamon and grated parmesan  cheese and serve very hot.

The stock can be used as a base for a soup. It should be carefully strained and will be so rich that it will become thick jelly.
