Pork Pot Roasted in Milk (Veneto)



Loin of Pork- 2-2 1/2 pounds

Olive oil- 5 tbsps

Rosemary- 1 sprig

Garlic - 1/2 clove


Milk- 2 1/2 cups


Have the pork boned and rolled. Heat the oil in a heavy casserole, one into which the meat will fit snugly. Add the rosemary and garlic, then the meat and salt. Fry the meat, turning it from time to time, until brown all over. Discard the rosemary and garlic. Pour the milk over the meat, cover the casserole and cook for about 90 minutes.

Cut the meat into medium-thick slices, arrange them on a hot platter and keep hot in a warm oven. Bring the sauce in the casserole to a quick boil, pour over the meat and serve immediately.

Serves 6.
